Brinjal Moju


Brinjol Moju |Brinjol Fry |Sri lankan Moju|Brinjol Moju recipe | 


INGREDIENTS 

  1. Brinjol - 250g
  2. Green Chilies - 5
  3. Garlic - 3 (Minced)
  4. Curryleaves 
  5. Chilli powder - 2 tbsp 
  6. Shallots - 10 to 15
  7. Sugar - 1 tbsp 
  8. Salt - to taste 
  9. Vinegar - 4 tbsp 
  10. Oil - to fry
  11. Turmeric Powder - 1 1/2 tsp 
  12. Thick Coconut milk - 1/2 cup 

INSTRUCTIONS 

  • Wash the brinjol and cut into thin sticks like picture shown below. 👇 

  • Then add 1/2 tsp of turmeric powder and mix well.

  • Keep a frying pan in high heat add enough to deep fry the Brinjol. 

  • Fry the Brinjol until dark brown.

  • Keep another pan in medium flame then add fried brinjols. 
  • Also add shallots, garlic, curry leaves, green chilies, thick coconut milk, sugar, vinegar, salt, chili powder at once and mix well.

  • Then wait for 2 minutes until bubble up.
  • Then switch off the flame. 
  • Our Srilankan style brinjol moju is ready to serve.
