INGREDIENTS
- Brinjol - 250g
- Green Chilies - 5
- Garlic - 3 (Minced)
- Curryleaves
- Chilli powder - 2 tbsp
- Shallots - 10 to 15
- Sugar - 1 tbsp
- Salt - to taste
- Vinegar - 4 tbsp
- Oil - to fry
- Turmeric Powder - 1 1/2 tsp
- Thick Coconut milk - 1/2 cup
INSTRUCTIONS
- Wash the brinjol and cut into thin sticks like picture shown below. 👇
- Then add 1/2 tsp of turmeric powder and mix well.
- Keep a frying pan in high heat add enough to deep fry the Brinjol.
- Fry the Brinjol until dark brown.
- Keep another pan in medium flame then add fried brinjols.
- Also add shallots, garlic, curry leaves, green chilies, thick coconut milk, sugar, vinegar, salt, chili powder at once and mix well.
- Then wait for 2 minutes until bubble up.
- Then switch off the flame.
- Our Srilankan style brinjol moju is ready to serve.
