kuska (plain briyani)

How to make tasty Kuska ?


Kuska rice or plain biriyani without vegetables, chicken and mutton made in South India. We are going to keep it very simple. This biriyani is made without vegetables or meat so no chopping or grinding work and yet it taste flavourful. This can be served with chicken or biriyani gravy and raita 


INGREDIENTS 

  • Rice - 2 cups 
  • Ghee - 2 tbsp 
  • oil - 2 tbsp 
  • Bay leaf - 2 
  • Cardamom - 3 
  • Cinnamon stick - 2 
  • Star anise - 2 
  • Cloves - 4 
  • Fennel seed - 1 tsp 
  • Onion - 2 
  • Ginger - 1 inch 
  • Garlic - 4 
  • Green chilies - 2 
  • Turmeric powder - 1 tsp 
  • Garam masala - 1 tsp 
  • Chili powder - 1 tsp 
  • Mint & coriander leaves - handful 
  • Tomatoes - 2 
  • Curd / yougurt - 1/4 cup 
  • Salt - to taste 

Ratio 

2 cup rice soak for 30 minutes 
1 1/2 water for 1 cup rice 


METHOD 

  1. In a pressure cooker or vessel, add ghee and oil after that add whole spices for flavouring. Add bay leaf, cinnamon stick, star anise, cardamom, cloves and fennel seeds. 
  2. After some minutes add the sliced onions to this also add pinch of salt. 
  3. Sauté until the onions are nice and golden. 
  4. In the meanwhile grind or pound ginger, garlic and chillies. Like shown in the picture below. 👇 

5. Now , add the grind paste to the onions.

6. Cook until raw smell is gone. 

7. Now, add the turmeric powder, chilli powder and       garam masala and mix well. 

8. Once the raw smell is gone, add tomatoes and cook until everything turns into a paste. 

9. Now add curd or yougurt (to get little sourness)

10. In this stage add mint and coriander leaves.

11.  Bring everything to a well mixed mixture, like the picture shown below. 👇


12. Now , add the soaked rice and mix everything together. 

13. Next add the water and finally add required salt. Water should taste little Salt while taste testing. 


14. Cover and let that cook for 1 whistle on medium heat. If you using a vessel then you cover the vessel with a lid and check while it is cooking. 

15. After 1 whistle, open the lid and always use a thin spoon to flip to prevent breaking.
