Special Diwali Jalebi




In this new post we are going to make Special Diwali Sweet Series number 04. We are going to make special diwali Jalebi.

INGREDIENTS 

For The Dough 

  1. Water - 1.1.5 cup
  2. Milk - 1/2 cup 
  3. Salt - 1/4 tsp 
  4. Oil - 2 tbsp 
  5. All purpose flour - 2 cups 
  6. Semolina - 2 tbsp
  7. Cornstarch - 1 tbsp
  8. Vanillaessence - 1 tsp 
  9. Egg - 3
  10. Oil - For deep fry

For The Sugar syrup 

  1. Sugar - 2 cups 
  2. Water - 1.5 cup 
  3. Cardamom - 3 pieces 
  4. Lemon juice - tbsp
  5. Saffron - 1 ppinch  (optional)

METHOD 


  • Keep a saucepan in medium heat, add water, milk, salt , oil,  all purpose flour and mix until well combine.


  • Mix until soft dough consistency. (Still the pan in medium flame.)
  • Then transfer the dough to a bowl and let that to cool.



  • Meanwhile  we start to make sugar syrup,  In a pan add sugar and water in medium high heat. 



  • When the sugar syrup starts to bubble up, add cardamom and lemon juice. 
(Adding lemon juice to avoid the crystallising.)

  • Boil for 5 more minutes. 
  • When the sugar syrup becomes 1 string consistency switch off the stove. 


  • Let's come back to the dough, in the dough add semolina, cornstarch, vanilla extract, egg (one at a time)


  • Beat them using a electric beater.


  • I'm using this nozzle. You can use any nozzle or even a piping bag. 


  • In a piping bag set the nozzle and fill the bag with the dough. 


  • Keep a frying pan and add oil to deep fry on medium heat. 
  • After oil gets heat, rotate the piping bag to oil for 4-4-5 rounds.


  • Cut the edge from piping bag.  Just dip the cutting scissor before cut the edge. 


  • Fry until golden brown for both sides. 


  • After  frying take out from the oil.


  • Then directly add the fried Jalebies to the prepared sugar syrup and soak for 1-2 minutes.
