Cheesy Rice Balls Using Leftover Rice


These Rice Balls (Arancini) are also flavourful with a crispy exterior and soft and cheesy centre.  These crispy balls are such a satisfying treat and best served warm when they are creamy and cheesy in the centre. 


INGREDIENTS 

  1. Leftover rice - 2 cups 
  2. Finely chopped onions - 1 small size 
  3. Finely chopped bell pepper -2 tbsp 
  4. Minced garlic - 1 clove
  5. Chopped coriander - 2 tbsp 
  6. Salt - 1/2 tsp
  7. Black pepper - 1/2 tsp 
  8. Chili flakes - 1/2 tsp 
  9. Breadcrumbs - 1/2 cup 
  10. Shredded mozzarella cheese - 1 cup 
  11. Egg - 1 large size 
  12. All purpose flour - 1/2 cup 
  13. Breadcrumbs - 1/2 cup
  14. Egg - 1 small size 
  15. Vegetable oil - to fry 

INSTRUCTIONS 

  • In a bowl add leftover rice, onions, bell pepper, garlic, coriander, salt , black pepper, Chilli flakes, breadcrumbs, mozzarella cheese and egg.

  • Mix everything together. 

  • Then wet your hand with water before making balls. (Repeat before making each balls)

  • Take a spoon full of mixture then make balls.

  • Set aside. 

  • Dust the 1st in all purpose flour 
  • 2nd in egg 
  • Then 3rd in breadcrumbs .

  • Refrigerate the prepared balls for 15 minutes. 

  • Keep a frying in medium flame and add vegetable oil. 
  • Then fry the balls until golden brown. 

  • Serve with ketchup.
