Easy Egg Muffin Recipe / Mini Vegetable Quiches without the crust. Quiche is baked savoury open flan /tart usually consisting of pastry crust filled with egg, cheese, cream milk and vegetables, meat or seafood. They can be made using any of your favourite vegetables, meats, cheeses and you can make them for breakfast, lunch or dinner. Quiche is the ultimate crowd - pleasing menu item and it can be served hot or cold. To makes Quiches at home you can use premade pie crustor or you can just make one on your own. But in this recipe, I have shared a very easy one that doesn't require you to make a crust also you don't have to cool any vegetables before baking, so it saves up lot of time and make the recipe a lot easier. The best part about this recipe is they can be made in advance. As you don't need a lot of preparation to make these full of flavour and tasty quiches you can make them anytime you want. You can make and store them in a bunch and you breakfast already done for the entire weeks. They are also great to take it to your tiffin.
INGREDIENTS
- Cherry tomatoes - 5 to 6 pieces (cut into halves)
- Carrot - 1 small size (shredded)
- Zucchini - 1/2 of a small size (shreeded)
- Eggs - 6 large size
- Heavy cream - 1 cup
- Salt - 1/4 tsp
- Black pepper - 1/4 tsp
- Ground nutmeg - 1 pinch (optional)
- Chopped coriander - 2 tbsp
- Mozzarella Cheese - 1/4 cup (grated)
INSTRUCTIONS
- Grease the miffin tin with oil.
- Crack the egg to bowl and whisk well
- Then add heavy cream, salt, black pepper, ground nutmeg and mix well.
- Now pour the egg preparation to the muffin tin fill them halfway through.
- Then add tomatoes, carrots, zucchini, chopped coriander, mozzarella cheese on top.
- Bake 15 to 20 minutes @180*C (350*F)
- Loosen the sides using a knife and serve.
