Blueberry Muffins


There is nothing better than starting your day with these incredible delicious blueberry muffins.  The soft and moist texture with tender crumbs makes these muffins super delicious. These blueberry muffins are so easy to make and the good thing is you can use both fresh or frozen blueberries for this recipe, that mean even blueberries are not in season you can still make these goodies using frozen blueberries and enjoy then whenever you want.


INGREDIENTS

  1. Milk - 1/3 cup  (80ml)
  2. Lemon juice - 1 tsp
  3. All purpose flour - 1/2 cup
  4. Baking Powder - 1.5 tsp
  5. Salt - 1/4 tsp
  6. Blueberries - 1/4 cup  (washed & drained)
  7. Sugar - 1/2 cup
  8. Vegetable oil - 3 tbsp
  9. Melted butter - 3 tbsp
  10. Vanilla extract - 1 tsp
  11. Egg - 1 large size


INSTRUCTIONS 

  • To make buttermilk substitute add lemon juice to the milk then mix and set aside. 

  • In a large bowl add flour, baking powder, salt and mix well with a whisk. 

  • Then add blueberries and mix with the flour.  Set aside. 

  • In another bowl add sugar, vegetable oil, melted butter, vanilla extract, egg beat well.

  • Then add the flour mixture to the batter .

  • And also add buttermilk substitute. 

  • Fold and mix until just combined. 

  • Take muffin tray lined with cupcakes papers.

  • Fill the batter almost to the top.
  • Sprinkle the tops with little sugar. 

  • Bake 20 minutes on 200*C / 400*F preheated oven. 

  • Take out from the oven and let it come room temperature. 

  • Now you can enjoy your morning breakfast.
