Cauliflower Chicken Fried Rice is a great alternative to grabbing take out! It is a low crab , a healthy side dish that anyone will enjoy. Cauliflower rice has a light and fluffy texture similar to couscous. It is also tender and its tiny granules have just the right amount of chew, like rice. Though you can buy them readmade from supermarkets, it is also very easy to make them at home just bu pulsing cauliflower florets in a food processor (or simply by grating them with a grater) until it has the texture of the rice. If you are looking to include something low crab and healthy yet delicious to your diet, this rice is for you, as it is made from one of the healthiest cruiferous vegetables you can get, so it is loaded with nutrients including fiber, vitamin C, K and B6 and potassium. Cauliflower has 25 calories per cup vs. 218 for a cup of cooked brown rice.
INGREDIENTS
- Cauliflower - 1 head (800g)
- Vegetable oil - 3 tbsp
- Chopped Onions - 1 medium size
- Finely chopped garlic - 1 tbsp
- Finely chopped ginger - 1 tbsp
- Chicken breast - 1
- Frozen mixed vegetables - 1 cup
- Salt - 1/2 tsp
- Black pepper - 1/2 tsp
- Chili flakes - 1 tsp
- Soy sauce - 2 tbsp
- Egg - 2 medium size
- Chopped coriander
INSTRUCTION
- In a food processor add washed and dried then pulse to a coarse texture.
- Grind to a coarse texture.
- Then transfer to a bowl and set aside.
- Then in a pan add oil, onions, garlic, ginger and sauté for few minutes.
- Now add cut chicken sauté for 5 minutes.
- Add vegetable, salt, pepper, chili flakes, soy sauce then sauté for 3 to 4 minutes.
- At this stage add coarse grind cauliflower and mix well.
- Cook for 4 minutes or until the cauliflower is softened.
- Now add egg to the centre of the pan.
- Let it to fry few minutes and mix with the cauliflower rice.
- Let it to fry few minutes and mix with the cauliflower rice.
- Finally add chopped coriander and mix well.
