Shahi Firni


Shahi Firni is a very popular rice pudding dessert.  It's a traditional sweet recipe, usually prepared for different types of occasions. This dessert is very delicious and loved by almost everyone. Especially the firni prepared in wedding parties /  biye barir firni are just mind blowing.  It's is very easy and quick to make and requires only few basic ingredients. So, in this post I have shared the recipe of Shahi Firni / Biye Barir Firni.



INGREDIENTS


  1. Whole Milk - 1 litre
  2. Sugar -1/2 cup
  3. Cardamom -3
  4. Cinnamon stick - 2 inch stick
  5. Raisins - 1 tbsp
  6. Saffron milk - 3 tbsp
  7. Ghee - 1 tbsp
  8. Rose water - 1 tsp
  9. Pistachios and cashews - soaked in milk
  10. Basmati Rice - 1/4 cup  (soaked 15 minutes in water)
  11. Khoya - 1/2 cup


INSTRUCTIONS


  • Mix Khoya with little milk and mix well. Set aside. 

  • Add soaked basmati rice in a a mortar pestle and just crush the rice in to crumbs. (You can also use mixer to pulse).

  • Transfer the rice to a bowl.

  • Then pour water just to cover the rice.

  • Keep a pan in medium heat and pour in the milk.

  • Also add cinnamon stick and cardamom mix constantly.


  • When the milk little thick add rice with the water and stir continuously so that no lumps form.

  • Now add the Pistachios and cashews. Grind paste and mix. 

  • Also add Khoya mixed with milk and stir well.

  • When the rice is boiled soft add sugar then mix well and dissolve it stir continuously. 

  • Now add ghee, raisins and saffron milk mix well.
  • Finally add rose water then cook it in low flame. Cook for about 4-5 minutes in low flame. 


  • When it's neither too runny nor too stiff, turn off the heat, pour the mixture in the terracotta bowl.

  • Cool down to the room temperature and keep them in the refrigerator for 2-3 hours. 

  • Garnish and serve.
