Spicy Chicken Roast


INGREDIENTS 

For Spice Powder 


  1. Cardamom - 15 to 16 pieces 
  2. Cinnamon stick - 2 pieces 
  3. Whole black pepper - 1/2 tsp 
  4. Black cumin seeds - 2 tsp 
  5. Cloves - 6 to 7 pieces 
  6. Black cardamom - 1 piece 
  7. Nutmeg - 1 small size 
  8. Mace - 1 big size 

For Cashew Paste

  1. Fried onions - 1 /2 cup 
  2. Yogurt - 1/2 cup 
  3. Soaked cashews - 20 to 25 pieces 

For Gravy

  1. Chicken - 1.5 kg
  2. Salt - 1 tsp
  3. Turmeric Powder - 1/4 tsp
  4. Oil - 1/2 cup
  5. Onion paste - 1/2 cup 
  6. Ginger and garlic paste - 1 heaped tbsp
  7. Bay leaf - 1 piece 
  8. Green chilies - 6 to 7 pieces
  9. Coriander powder - 1 tsp 
  10. Red chilli powder - 1 tsp 
  11. Turmeric Powder  - 1/4 tsp 
  12. Water - 1/4 cup 
  13. Salt - 1/2 tsp
  14. Milk - 1/2 cup 
  15. Water - 1/2 cup
  16. Dried plums - 5 to 6
  17. Green chilies - 5 to 6 pieces 
  18. Rose water - 1 tbsp
  19. Ghee - 1 tbsp
  20. Fried onions - 1 tbsp


INSTRUCTIONS 

  • Dry roast the Cardamom, Cinnamon stick, Whole black pepper,  Black cumin seeds, Cloves, Black cardamom , Nutmeg,  Mace
  • Then grind it into fine powder. 

  • In a grinder jar add fried onions, yogurt, and cashews.
  • Grind into a paste. 

  • Put regular cuts in chicken.
  • Then add salt , turmeric powder mix well. 
  • Set side.

  • Keep a pan in medium high heat and add oil .
  • Fry the chicken until half cook.

  • Then remove from the pan keep a aside. 

  • In the same pan add onion paste and ginger and garlic paste.
  • Fry for 2 minutes. 

  • Then add bay leaf, green chilies and the roasted masala (half amount of the prepared spice powder.)

  • Now add coriander powder, red chilli powder, turmeric powder.

  • Also add the grind paste (whole amount made before.)
  • Cook well. 

  • Add water cook for 5 minutes on low heat.

  • After oil separates add salt to your taste and also add the fried chicken pieces and mix well with the gravy.

  • Now add milk and water mix well. 

  • Close with a lid cook.

  • Finally add dried plums, green chilies, rose water.

  • Also add ghee and fried onions.

  • Close with the lid and cook for another 5 minutes on low heat. 

  • Now tasty spicy chicken roast is ready to serve.
