Best Red Lentil Soup To Warm You Up This Winter.


This creamy  lentil soup, prepared Greek style, will suprise your taste buds in the best way possible! Red Lentils, combined with onions, garlic and sweet carrots in a tomato based broth. Infused with cumin, turmeric, black pepper. Finished with a bright splash of lemon juice.


Lentils are easy to use and are a great way to get wide range of nutrients, from B vitamins to iron, fibre and more. And because they are made of over 25% protein, Lentils are really an excellent meat alternative. 


INGREDIENTS 

  1. Red Lentils - 1 cup 
  2. Olive oil - 2 tbsp 
  3. Butter - 2 tbsp 
  4. Chopped Onions - 1 medium size 
  5. Garlic - 3 cloves (sliced)
  6. Potato - 1 big size 
  7. Carrot - 1 big size 
  8. Tomato - 1 medium size  (Chopped)
  9. Salt - 1/2 tsp
  10. Black pepper -  1/2 tsp
  11. Red chilli powder -  1/2 tsp
  12. Cumin powder -  1/2 tsp
  13. Turmeric Powder -  1/2 tsp
  14. Vegetable stock - 4 cups 
  15. Lemon juice - 2 tbsp 


INSTRUCTIONS 


  • Add the red Lentils to a bowl and water.
  • Wash and strain. 

  • Keep a pan on medium heat add olive oil, butter, onions, garlic fry until translucent. 

  • Then add potatoes and carrots cook for 6 to 8 minutes. 

  • Now add tomatoes and cook until soft.

  • Also add salt, pepper powder, chili powder, cumin powder, turmeric powder, mix well. 

  • Then add red lentils and mix with the spices. 

  • Now add vegetable stock (add more if you need) bring it to a boil. 

  • Partially cover and simmer for 20 minutes over low heat. 

  • Then open the lid and blend with a hand blender until smooth.

  • Finally squeeze the lemon mix well and switch off the flame. 

  • Transfer to a soup bowl.

  • Garnish with coriander leaves if you needed and serve hot.
