Peri Peri Chicken


In this post we are going to make Easy Peri Peri Chicken at home. This Peri Peri Chicken recipe is very simple, you can use chicken legs with the skin on or remove the skin. I have cooked both ways and it is great either way. You can also use this marinate on chicken wings, chicken drum sticks or a whole chicken. The longer you leave the chicken to marinate the better for maximum taste. I would recommend marinating overnight, I didn't leave it to marinate for very long and it still tasted awesome.

INGREDIENTS 


  • Chicken legs - 6 (skin on or off)
  • Medium onion - 1/2
  • Garlic cloves - 3
  • Olive oil - 1/4 cup 
  • Lemon juice - 2 tbsp 
  • White vinegar - 2 tbsp 
  • Salt - 1 tsp 
  • Kashmiri red chilli powder - 1/2 tsp 
  • Paprika - 1 tsp 
  • Black pepper powder - 1 tsp 
  • Red food colour - 1/4 tsp  (optional)
  • Yellow food colour - 1/4 (optional)
  • Whole scotch bonnet pepper - 1 (seeds include)


INSTRUCTIONS


1.  Grind all  the ingredients to a smooth paste  given in the ingredients description above. 




2. Put deep curry cut in the chicken legs.



3Apply this Spicy paste on the chicken both sides. 


   


4. Turn the chicken legs upside down, this is so the chicken finishes cooking and browning on the top.



5. After marinated chicken, leave for overnight or at least 2 hours. 

6Roast the marinated chicken in a prepreheated oven on 200*C or 400*F for 35 to 40 minutes. 

7. Rotate  the chicken halfway through. 




8. You can brown the skin under a grill or broiler for 5 minutes for a better colour which I got.

9. You can also place the chicken pieces on a wire rack over an oven tray and coast in the oven , this creates a drier chicken leg or alternatively grill or fry in a pan,  a cast iron pan gives the chicken an authentic grilled look.
