Mini Cheesecake


INGREDIENTS 


  1. Digestive biscuits - 6 pieces 
  2. Melted butter - 3 tbsp 
  3. Cream cheese - 180g (room temperature)
  4. Sugar - 1/2 cup 
  5. Egg - 1 large size 
  6. Vanilla extract - 1/2 tsp 
  7. All purpose flour - 1 tbsp 
  8. Sour cream - 1/4 cup 

INSTRUCTIONS 


  • In a food processor add digestive biscuits and grind until powder.

  • Then add melted butter and grind one more time. 

  • Prepare cupcake pan lined with cupcake liners add the biscuit crumbs then slowly press down with a spoon. 

  • Refrigerate for 10 to set.

  • In a bowl add cream cheese beat until creamy. 

  • Then add sugar then beat again until sugar dissolves. 

  • At this time add egg and vanilla essence then beat in low speed just to combine.

  • Add all purpose flour.

  • And also add sour cream beat until fully combined. (Do not over mix.)

  • Fill the cupcakes Three-quarters with the cream .

  • Bake 15 minutes 160*C or 325*F on preheated oven. 

  • Let it cool to room temperature then refrigerate 4 to 6 hours to chill.

  • Remove the cupcake liners then garnish with strawberry  jam or raspberries.
