INGREDIENTS
- Digestive biscuits - 6 pieces
- Melted butter - 3 tbsp
- Cream cheese - 180g (room temperature)
- Sugar - 1/2 cup
- Egg - 1 large size
- Vanilla extract - 1/2 tsp
- All purpose flour - 1 tbsp
- Sour cream - 1/4 cup
INSTRUCTIONS
- In a food processor add digestive biscuits and grind until powder.
- Then add melted butter and grind one more time.
- Prepare cupcake pan lined with cupcake liners add the biscuit crumbs then slowly press down with a spoon.
- Refrigerate for 10 to set.
- In a bowl add cream cheese beat until creamy.
- Then add sugar then beat again until sugar dissolves.
- At this time add egg and vanilla essence then beat in low speed just to combine.
- Add all purpose flour.
- And also add sour cream beat until fully combined. (Do not over mix.)
- Fill the cupcakes Three-quarters with the cream .
- Bake 15 minutes 160*C or 325*F on preheated oven.
- Let it cool to room temperature then refrigerate 4 to 6 hours to chill.
- Remove the cupcake liners then garnish with strawberry jam or raspberries.
