For a decadent dessert, that's quick and easy to make, try this caramelised banana split, topped with ice-cream and drizzled dark chocolate sauce.
INGREDIENTS
- 100g good quality dark cooking chocolate, chopped
- 3/4 cup (180ml) thickened cream
- 1/2 teaspoon vanilla essence
- 60g butter, chopped
- 1/2 cup (11g) brown sugar
- 4 firm ripe bananas, halved lengthways
- 8 scoops vanilla ice cream
- 1/4 cup (35g) chopped roasted peanuts
METHOD
STEP 1
Place chocolate, 1/2 cup (125ml) cream and vanilla in a small saucepan over low heat. cook, stirring for 3 to 5 minutes or until smooth and chocolate is melted. Remove from heat and cover to keep warm.
STEP 2
Melt the butter and sugar in a large frying pan over medium low heat. Add the bananas and cook for 3 to 5 minutes, spooning the sauce over them until caramelised. Add the remaining cream and swirl to combine. Carefully transfer the banana to serving plates. Top each with 2 scoops of ice cream, drizzle with the chocolate sauce and sprinkle with peanuts to serve.
