Chettinad Chicken Biriyani




This special recipe for those who are tired of making same old way chicken biriyani.  Chettinad Chicken Biriyani. This biriyani recipe is spicy, flavourful, so satisfying and worth for the time spent for the recipe. This biriyani 's taste very vary than other normal biriyani.  Chettinad cuisine is known for being aromatic and spicy. The masala we used to make this biriyani is slightly different from others. The masala we used to make this recipe adds on interesting touch to this rice dish. 



INGREDIENTS 

  • Rice-- 400g 
  • Cardamom-- 3
  • Cinnamon stick-- 2 pieces 
  • Cloves-- 5
  • Green chilies-- 4
  • Mint leaves-- 1/2 hand
  • Coriander leaves-- 1/2 hand
  • Garlic--- 15
  • Ginger--- 2 inch piece 
  • onion--- 3
  • Tomatoes--- 2
  • Turmeric powder--- 1 tsp
  • Chili powder 
  • Salt--- to taste 
  • Curd--- 1/2 cup
  • Ghee--- 2 tbsp
  • Oil---'- 2 tbsp
  • Bay leaf -----1
  • Star anise--'- 1
  • Chicken

METHOD 

1. We have to make a fresh spice powder mix add cardamom, cinnamon stick and cloves pound these ingredients and turn this into a fins powder.


2. In a mixer add coriander leaves, mint leave, garlic, ginger and 2 green chilies and pour  little water turn that into fine paste.



3. Heat a thick bottom vessel or cooker. Add oil and ghee add bay leaf, star anise.

4. Add 2 slitted green chilies and sliced onions and fry it. Until it turns into brown colour. Then add tomatoes, sauté it well.

5. Now add turmeric powder and salt sauté well to everything comes together. 

6. Now add the grind paste into the mixture.  Fry it till the raw smell of ginger and garlic goes off.


7.  Now add cleaned chicken and sauté well for 5 minutes to allow the chicken to absorb the flavours.

8. After 5 minutes add chilie powder and freshly ground our magical masala powder to it and give it a mix.




9. Add curd and mix well. When it starts to bubble up add water.


10. When the water boils add washed rice and mix well.  (For 1 cup rice add 1 1/2 cups of water.)


11. Close the lid and cook. You will smell a nice aroma after 30-35 minutes so that way you will know the biriyani is ready now. 

12. Now turn it off the heat and remove the vessel from the heat.
