In this post we are going to make Chickpea Spinach Curry.
Chickpea Spinach Curry is a tasty, healthy, vegan and fulfilling recipe for everyone. This yummy recipe is full of Protein, iron and yummiest spices for the spice lovers as it contains the goodness of chickpeas, nutrients of spinach and goodness of coconut milk and taginess of tomatoes. This curry is easy to cook and just in a half an hour, you will found it in your dining table.
This chickpea Chicken Curry is so versatile that you can have if lunch as well as dinner. It goes awesomely tasty with boiled rice, cauliflower rice or even with every type of bread and chappathi.
INGREDIENTS
- Cooking oil -2 tbsp
- Chopped Onions - 1 large size
- Grated garlic - 1 tbsp
- Chopped green chilies - 2/3 piece
- Chili powder - 1 tsp
- Cumin powder - 1 tsp
- Coriander powder - 1 tsp
- Turmeric Powder - 1 tsp
- Garam masala - 1 tsp
- Salt - 1 tsp
- Black pepper powder - 1/2 tsp
- Chopped tomatoes - 2 large size
- Chickpea - 500g (boiled and drained)
- Coconut milk - 1 cup
- Spinach - 150g
INSTRUCTIONS
- Add oil to a pan in medium flame and add onions sauté until translucent.
- Then add grated ginger and garlic cook for 7 minutes or until fragrant.
- Now add green chilies and fry for few seconds.
- Now add Chili powder, turmeric powder, coriander powder, cumin powder, garam masala, salt and pepper powder.
- Mix well all spices and add little water to cook the spice powders.
- Add tomatoes and cook until tomatoes are start to break down.
- Now add chickpeas and mix with the gravy.
- Add coconut milk as well and bring it to a boil.
- Cover and simmer for 10 minutes over medium low heat .
- Lastly add spinach and cook for another 2 to 3 minutes.
- Now our Chickpea Spinach Curry ready to be served.
