NUTTY CHOCOLATE CHIP COOKIES



INGREDIENTS           Serves 35pcs

Butter                                  250G 
Brown Sugar                      200G
Vanilla                                 2tsp     
Cocoa Powder                   2tsp
Salt                                     1/2tsp
Egg Yolk                                 2
Plain Flour                         500G   
Chocolate Chips               200G
Cashew nuts chopped      50G


METHOD 


  1. Preheat oven to 150 degree Celsius. 
  2. Beat butter, brown sugar, vanilla and salt in a large bowl until creamy. 
  3. Beat in egg yolk. Gradually beat in flour and cocoa powder. Stir in 150g  Chocolate chips. Cover and refrigerate for hour or until firm.
  4. Roll half of dough to 1/4 inch thickness between two sheets of waxed paper. 
  5. Remove top sheet.
  6. Cut dough into shape using cookie cutter. Lift from waxed paper, place on ungreased baking sheets. 
  7. Refrigerate for 10 minutes , repeat with remaining dough.
  8. Bake for 10 minutes. Cool on baking sheets for 2 minutes, remove wire racks to cool completely.
  9. To pipe chocolate on top : place remaining 50G chocolate and 1 tablespoon of butter in a pan on a low fire for chocolate to melt. Pipe as required. Sprinkle chopped nuts on top.
