INGREDIENTS Serves 35pcs
Butter 250G
Brown Sugar 200G
Vanilla 2tsp
Cocoa Powder 2tsp
Salt 1/2tsp
Egg Yolk 2
Plain Flour 500G
Chocolate Chips 200G
Cashew nuts chopped 50G
METHOD
- Preheat oven to 150 degree Celsius.
- Beat butter, brown sugar, vanilla and salt in a large bowl until creamy.
- Beat in egg yolk. Gradually beat in flour and cocoa powder. Stir in 150g Chocolate chips. Cover and refrigerate for 1 hour or until firm.
- Roll half of dough to 1/4 inch thickness between two sheets of waxed paper.
- Remove top sheet.
- Cut dough into shape using cookie cutter. Lift from waxed paper, place on ungreased baking sheets.
- Refrigerate for 10 minutes , repeat with remaining dough.
- Bake for 10 minutes. Cool on baking sheets for 2 minutes, remove wire racks to cool completely.
- To pipe chocolate on top : place remaining 50G chocolate and 1 tablespoon of butter in a pan on a low fire for chocolate to melt. Pipe as required. Sprinkle chopped nuts on top.
