Healthy Summer Salad



Cucumber tomato and avocado salad is an easy and versatile one. It is a perfect combination of fresh crisp cucumber, juicy tomatoes and creamy ripe avocado. This salad is perfect not only for spring and summer but for any time of the year. you can prepare this salad for your lunch or as a side dish at dinner. tomato cucumber salad stays fresh for a couple of days in refrigerator, so it can be made earlier and stored in fridge to enjoy later.


INGREDIENTS 

  1. Cucumber - 1 large size 
  2. Cherry tomatoes - 8 to 10 pieces 
  3. Avocado - 1 medium size 
  4. Onions - 1/2 medium size 
  5. Fresh coriander leaves - 2 tbsp 
  6. Hard boil egg - 2 medium size
  7. Carrots - 1 medium size 
  8. Lemon juice - 2 tbsp
  9. Salt - 1/2 tsp 
  10. Pepper powder - 1/2 tsp 
  11. Olive oil - 1 tbsp 

INSTRUCTIONS 

  • In a large bowl add cut cucumber and tomatoes. 

  • Then add avocado cut into small pieces. 

  • Then add chopped tge freshly coriander leaves to the salad. 

  • And also add sliced onions to the salad.

  • Cut the carrots into thin sticks .
  • Then add to the sale. 

  • Now cut the hard boil eggs into quarter size and then add that too. 

  • Now add salt and pepper to the salad .

  • And also add olive oil.

  • Then mix well.
  • Niw you can enjoy your healthy salad .
