Semolina Cake/ Basbousa Recipe




INGREDIENTS 

  1. Sugar - 1 cup 
  2. Water - 1 cup 
  3. Lemon juice - 1 tsp 
  4. Rose water - 1 tsp 
  5. Eggs - 1 tsp 
  6. Sugar - 1/2  cup 
  7. Vanilla essence - 1 tsp 
  8. Semolina - 1.5 cup 
  9. Desiccated coconut -1/2 cup 
  10. Yogurt - 1 cup
  11. Melted butter - 1/2 cup 
  12. All purpose flour - 1/2 cup
  13. Baking Powder - 1 tsp 

INSTRUCTIONS 

  • Keep a saucepan in high heat and add sugar and water.

  • After sugar dissolves completely add lemon juice and rose water then mix well. 

  • Then after 1 minute switch off the flame. 
  • And set aside the sugar syrup. 

  • In a large bowl add eggs, sugar and vanilla essence mix with a whisk until sugar dissolves. 

  • Then in the same bowl add semolina, desiccated coconut, yogurt, melted butter and mix well.

  • Then sieve and add flour and baking powder. 
  • Then mix well the batter.

  • Take a 9×11 baking tray and grease that with butter or ghee.
  • Then transfer the cake batter to the tray.

  • Evelyn spread the mixture with a spatula. 

  • Bake 20 to 25 minutes at 180*C on preheated oven. 

  • Then take out from the oven and cut into pieces. 

  • Now pour the sugar syrup on top.

  • If you are a sweet lover you go crazy for this cake.

  • Garnish with chopped Pistachios.
