This coconut cookies / biscuits are very delicious bakery style cookies. Following my recipe, you can easily make these cookies at home with few basic ingredients and can store them in an air tight container for upto 2 weeks.


INGREDIENTS

  1. Icing sugar - 1/2 cup
  2. Melted ghee - 2 tbsp
  3. Desiccated coconut - 1/2 cup
  4. All purpose flour - 1 cup
  5. Baking Powder - 1/4 tsp
  6. Baking soda - 1/4 tsp
  7. Milk - normal temperature


INSTRUCTIONS 

  • In a bowl add icing sugar, melted ghee and mix with a whisk until creamy. 

  • Now add desiccated coconut.

  • Sieve and add all purpose flour, baking soda, baking powder then gradually mix well with a spatula. 

  • Then add 2 tbsp of milk and mix again add some more tbsp of milk.

  • Add milk until make semi soft dough.

  • Make small size of balls with the dough then gently press down to make cookie shape.

  • Then dust in Desiccated coconut.

  • Apply some butter or oil on the baking tray lined with parchment paper.
  •  Arrange the cookie dough on the baking tray.

  • Bake 20 to 25 minutes 150*C preheated oven.
