Perfect Lemon Bars


This lemon bars with a buttery shortbread crust at the bottom and silky smooth yet sweet lemon curd filling on the top are the best. These luscious lemon bars have the perfect balance between sweet and sour. They are very pretty to look at and very delicious at the same time.  A little dusting of icing sugar makes them look more attractive. These lemon squares can be a nice and colourful addition to a cookie platter and they are always a hit.


INGREDIENTS 

For the shortbread crust

  1. Salted butter - 1/2 cup (Room temperature)
  2. All purpose flour - 1 cup 
  3. Icing sugar - 1/4 cup 
  4. Vanilla essence - 1/2 tsp 

For the lemon curd filling 

  1. Egg - 3 large size 
  2. Sugar -1 cup 
  3. All purpose flour - 3 tbsp 
  4. Lemon juice - 4 tbsp  (fresh)
  5. Lemon zest - 2 tsp  (grated)

INSTRUCTIONS 

  • First  preheat your oven to 170*C (325*F).
  • Then grease a 7*7 inch baking tin with softened butter or oil and lined with parchment paper, set aside.

  • Now to make shortBread base take butter , all purpose flour, icing sugar, vanilla essence in a bowl.

  • Then combine everything using spoon or simply using your hand until the dough forms a ball.

  • Now part the shortbread dough into the lined baking tin.

  • Make sure it's nicely leveled and the sides are closed properly. 

  • Then prick the crust all over with a fork so it doesn't rise up while baking  

  • Bake the shortbread crust into your oven 170*C preheated oven for about 20 minutes or until its slightly brown on the edges. 

  • Meanwhile, in another bowl combine eggs, sugar, all purpose flour, lemon juice and lemon zest then mix well.

  • Take out the crust from the oven and fill with the lemon filling you just prepared. 

  • Bake again for 25 to 30 minutes or until set.
  • Once it's baked perfectly, there should be jiggling on top and a thin crackle crust will form on the top.

  • Allow it to cool completely to room temperature. 
  • Then refrigerate for at least 2 to 3 hours or overnight before serving. 

  • Cut into small pieces square., dip your knife into hit water after each cut if you like to get a clean cut evert time.

  • Dust with some icing sugar and enjoy.

  • You can store your lemon bars in an air tight box in the refrigerator for 4 to 5 days.
