Rasamalai is a very popular sweet in any South Asian countries. Originally rasamalai made from curd but it also possible to make it with milk powder. It saves a lot of time and tastes very similar to the original one. Also making rosamalai with curd is a bit more completed. This this the recipe if you want to eat rasamalai at home without difficulties. Very few ingredients are required to make this milk powder rasamalai also take very less time. I hope you will like this simple sweet recipe.


INGREDIENTS 

  1. Powdered milk - 1 cup 
  2. All purpose flour - 1 tsp 
  3. Baking powder - 1/2 tsp 
  4. Ghee - 1/2 tbsp 
  5. Egg - 2 medium size 
  6. Milk - 3 cups 
  7. Sugar - 1/2 cup 
  8. Cardamom powder - 1/2 tsp 
  9. Saffron - 1 pinch (optional)
  10. Thickened milk - 1/2 cup 
  11. Chopped Pistachios for garnishing 

INSTRUCTIONS 


  • In a mixing bowl add powdered milk, flour, baking powder mix all the dry ingredients. 
  • Then add ghee then make it crumbs. 

  • Now add beaten egg little by little and mix until sticky dough.

  • Cover and keep for 4 to 5 minutes to rest. 
  • After 5 minutes the dough will be non sticky. 

  • Apply some oil on your palm and make small balls.

  • Keep a pan in medium heat add milk and sugar mix until sugar dissolves. 

  • Now add cardamom powder, saffron mix well. 

  • When the milk simmer add the prepared rasamalai balls to the milk.

  • Close with a lid and allow it to cook in low flame for 10 minutes or until done.
  • Rasamalai will be super soft when boiling so make sure not to handle it gently as it could break.
  • Finally, open the lid add thickened milk and mix gently. 

  • Switch off the flame and let it to cool to room temperature then refrigerate for 2 to 3 hours at least or overnight before serving. 
  • Garnish with chopped Pistachios and serve.
